Domaine Daniel-Etienne Defaix

Daniel-Etienne Defaix is one of the oldest domaines in Chablis, they can trace their origins back to the thirteenth century and have been producing Chablis since the eighteenth century. Daniel-Etienne is one of the few producers today to still make Chablis as his ancestors did, keeping the wines in tank for extended ageing on lees, bottling late, and only releasing wines when they are ready to drink. Today Daniel-Etienne is ably assisted by his son Paul, who represents the fifteenth generation of the Defaix family.
