Champagne Chavost
Based in the village of Chavot-Courcourt, just south of Épernay, Champagne Chavost is a leading name in the world of low intervention winemaking. Born in 1946 from a cooperative of growers, production is centred on 5 hectares of vines around the village. The cooperative produced wines for its members until 2016 when they began selling 3,000-4,000 bottles per year under the name Chavost (the ancient name of the village). Then, in late 2018, oenologist Fabian Daviaux returned home to the village in which he grew up to take Champagne Chavost in a different direction. Son of a winegrower from Chavot-Courcourt, Fabian joined on the proviso that all 5 hectares be converted to organic viticulture, all vinification would occur without sulphites and that all Chavost wines made from these plots be 100% vintage. The 5 hectares of vines in Chavot-Courcourt have been certified organic since the 2023 harvest, with roughly 30,000 bottles produced annually. However, this is not enough to satisfy demand, so an entry level cuvée was created using non-organic grapes from cooperative member’s vineyards, made to the same exacting standards as the organic champagnes. The cooperative now stands at 55ha total, of which 5 are grown organically for Champagne Chavost, 10 produce Blanc Assemblage, 10 vinified at the cooperative for the members, and 30 for other champagne houses. Vinification for Champagne Chavost wines involves spontaneous alcoholic and malolactic fermentation in thermo-regulated stainless steel, no added sulphites, no fining, acidification, deacidification or dosage.
